SWAP SMART,

"Seed oils are poison" is one of the loudest food claims online. The American Heart Association's presidential advisory on dietary fats (Circulation, 2017) reviewed the controlled evidence: randomized trials in which saturated fat was lowered and replaced with polyunsaturated vegetable oil reduced cardiovascular events by roughly 30% — a reduction comparable to what statins achieved in those same trials. The same swap lowers LDL cholesterol, the main driver of atherosclerotic plaques, and prospective cohorts consistently show lower rates of cardiovascular disease and death.

The catch: this is about the fat you cook with replacing saturated fat — not a green light for deep-fried foods, which add calories and reheated oil byproducts. And the swap matters: replacing saturated fat with refined carbohydrates and sugars showed no cardiovascular benefit in the very same trials. The oil is not the villain; the frying, the portions, and the overall dietary pattern are.
